This beautiful Santoku was hand forged from 52100, high carbon steel, and given a hand hammered texture. 52100 is an excellent steel for kitchen knives as it offers a bit of extra rust and patina resistance, and good edge retention. The blade has a tall bevel with a razor sharp flat grind, allowing for fine slicing and dicing.
